Kanazawa enjoys ready access to some of the finest ingredients from both land and sea, making it the perfect city for chefs and food lovers alike. On the second floor of Kenjotei, we serve lovingly prepared dishes that focus on fundamentals, making the most of choice ingredients purchased earlier the same day at Omicho Market and elsewhere. Certainly, seasonal ingredients are a familiar enough theme around the world; however, Japanese cuisine goes a step beyond, placing emphasis on seasonal ingredients not only at their peak, but also on the micro-seasons before and after. Our executive chef takes pride in expressing the delicate feel of the seasons through food.

Served in elegant lacquered boxes inspired by the garden picnic boxes once served to feudal lords of the Kaga Domain. The three drawers hold seasonal Kanazawa specialties, served in elaborate Kutani Ware dishes. Enjoy the traditional local favorite jibu-ni, alongside a choice selection of fresh local seafood, and a grilled dish.
Four Luxuries: Roast Noto Beef Hitsumabushi

The moment you open the lid, the air fills with the appetizing aroma of roast beef.
Our roast beef is made with carefully selected Wagyu beef, marinated in a special sauce before slowly cooking it at a low temperature, to ensure a rich beef flavor.
To eat, we recommend starting with just the beef and rice. Next, try it along with the fluffy “meringue” egg, then with the flavorful sides for additional variety. Finally, pour dashi stock over top to finish it as a light, refreshing soup, for the fourth of this dish’s “four luxuries.”
Five Luxuries: Golden Noto Roast Beef Hitsumabushi

Four Luxuries: Binchotan Char-Grilled Eel Hitsumabushi (Reservations Required)

The moment you open the lid, the air fills with the appetizing aroma of grilled eel, smoked naturally as the fat dripped out onto the premium binchotan charcoal.
The skin side is slowly cooked at a distance, while the meat side is grilled over much more intense heat for a tender yet crisp texture and a rich flavor.
The eel is coated with a special sweet-and-savory sauce made with locally produced soy sauce, and served alongside a soft and fluffy dashimaki rolled omelet on a bed of Koshihikari rice — Saitaki no Kaori, a local variety from Kanazawa that is particularly well-suited to eel hitsumabushi.
To eat, we recommend starting with just the eel and rice. Next, move on to eating it along with the egg, then try it with the flavorful sides for some added variety. Finally, pour dashi stock over top and finish it as a soup, for a fourth way to enjoy this Kenjotei specialty.

Carefully prepared roast beef made from Noto Beef, served as bite-sized sushi. Enjoy the harmony created between the rich meaty flavor of the roast beef and three luxurious toppings. Roast beef sushi is a favorite at our kaiseki multi-course dinners, and we are pleased to now offer it at lunchtime.

We start by preparing a sweet and savory broth with locally produced soy sauce, katsuo-bushi bonito tuna flakes, and two types of coarse sugar. We then slowly simmer fried tofu from Kanazawa Tofu, a local institution with over a century of history, until it’s tender and flavorful, then stuff it with sushi rice. Perfect to take home, or for celebrations.
